Taxonomy: Szechuan Restaurants

Eating establishments that offer the style of Chinese food that is served in the southwestern province of Szechuan. Regional specialties may include hot and sour soup, sizzling rice soup, Szechuan duck (deep-fried crispy duck), Ma Po To Fu (Szechuan-style bean curd), pork with Szechuan pickled cabbage soup, cold noodles with sesame sauce, eggplant with garlic sauce, parchment-wrapped chicken, eggplant with ground pork, beef with orange or tangerine sauce, twice cooked pork and shredded pork with broccoli. Szechuan dishes are typically seasoned with very hot fagara red peppers, onions, mushrooms, ginger and fennel.
