Eating establishments that offer one or a variety of regional specialties that represent the cuisine of China. Many dishes are stir-fried and contain thinly sliced or diced meats and vegetables that are quickly sauteed in vegetable oil and an appropriate blend of seasonings, and served immediately with rice. Others are deep-fried, barbecued, oven roasted, braised, steamed or prepared in a firepot. Ingredients may include water chestnuts, bok choy cabbage, bean sprouts, bamboo shoots, lotus root, hoisin sauce, oyster sauce, soy sauce, Chinese mushrooms, bean curd and fresh ginger. Fresh and saltwater fish figure prominently on the menu as well as chicken, duck, beef, lamb and pork. Beverages usually include tea and Chinese beer (Tsingtao).
